It's been a while since i've been able to get things done in the kitchen, just never enough time. This past weekend, a few months delayed (I was going to make these and wontons for Chinese New Year), I made Chinese Almond Cookies. They were delicious. Very difficult to eat just one. Baking them sure brought back some memories.

When I was a kid, we had an aunt who was married to a Chinese fellow. She would take my family to Chinatown to eat, and then she would send us home with a brown paper bag filled with greasy Chinese noodles, and a box (box shaped like a shoebox) of Almond cookies.
